We love nachos but we know the chips are not the best thing for our waistlines. Here's a great alternative to nachos for gameday... or any day! I promise, the only thing under all the cheese is veggies!
12-15 mini bell peppers, halved and seeded
1c succotash mixed vegetables
1c black beans, rinsed and drained
1 tomato, diced
1-2c grated cheese
Preheat oven to 400. Line oven safe dish with bell peppers. Mix together vegetables, beans, and tomato. Fill peppers with mixture. Top with cheese. Bake until golden brown. Enjoy (and feel less guilty) while watching some football!
