Coat bottom of a baking dish with both red and green enchilada sauce. Dip tortilla in sauce, fill with 1/2c vegetables, roll and place in dish with seam down. Repeat until all ingredients are used up. Pour over remaining red and green enchilada sauce. Top with cheese. Bake in th oven for 25 minutes until heated through and cheese starts to brown. I had my first day of work this week as an OT in 2.5 years! It kind of
seems surreal to be back after working so hard to get my license since

I am always looking for healthy cookie recipes so when this recipe came out on <a href="http://toneitup.com/2014/05/beach-themed-cookie-party/" target="_self" title="">Tone It Up</a> last week I knew I had to try it. They turned out so well I thought I would share the recipe with you!</p><div class="separator" style="clear: both; text-align: center;"><a href="https://lh5.googleusercontent.com/-OH8gSioaEls/U3v5wpQHpmI/AAAAAAAAFKg/bDJFxAPlWD8/s1024/Photo%25252020140520195631.jpg" target="_blank" style="margin-left: 1em; margin-right: 1em;"><img src="https://lh5.googleusercontent.com/-OH8gSioaEls/U3v5wpQHpmI/AAAAAAAAFKg/bDJFxAPlWD8/s500/Photo%25252020140520195631.jpg" id="blogsy-1400633797880.1326" class="aligncenter" width="500" height="500" alt=""></a></div><p style="text-align: center;"> 1 1/2c almond flour</p><p style="text-align: center;">2T coconut oil, at room temperature</p><p style="text-align: center;">1t Mexican vanilla</p><p style="text-align: center;">1/4t salt</p><p style="text-align: center;">1T maple syrup</p><p style="text-align: center;">1/4t coconut sugar</p><p style="text-align: center;"> </p><p style="text-align: center;">Mix together dry ingredient in a bowl. Make a well and add wet ingredients. With a fork, mix together ingredients until dough forms a ball and pulls away from the sides of the bowl. <span style="line-height: 1.3em;">Place the dough between 2 sheets of parchment and refrigerate for an hour.</span><span style="line-height: 1.3em;"> </span></p><p style="text-align: center;">Preheat oven to 375. Remove dough from fridge and roll out between sheets of parchment until dough is 1/8" thick. Use cookie cutter to cut shapes (I used sea shells) and place on cookie sheet. Bake for 12-15 minutes. Remove and let cool completely. </p><p style="text-align: center;">For icing, mix a small amount of coconut extract with plain Greek yogurt. Spoon into a small bag. In a large casserole dish, combine squash, mushrooms, onion, 2T evoo, Italian seasoning, & pepper. How was your weekend? Our was good as it involved naps, new shoes, and walking. We also made this great dish last night. The recipe was vegan but I made some non-vegan substitutions based on what we had at home and it turned out great!</p><div class="separator" style="clear: both; text-align: center;"><a href="https://lh5.googleusercontent.com/-KvAuEy6Nk0k/U125Vm7Vl_I/AAAAAAAAFHw/MbNOleY741o/s1024/Photo%25252020140427211339.jpg" target="_blank" style="margin-left: 1em; margin-right: 1em;"><img src="https://lh5.googleusercontent.com/-KvAuEy6Nk0k/U125Vm7Vl_I/AAAAAAAAFHw/MbNOleY741o/s500/Photo%25252020140427211339.jpg" id="blogsy-1398651224773.562" class="aligncenter" width="500" height="500" alt=""></a></div><p style="text-align: center;"> 1 package, brown rice penne, cooked to el dente</p><p style="text-align: center;">1T margarine</p><p style="text-align: center;">1c milk</p><p style="text-align: center;">1T arrowroot powder</p><p style="text-align: center;">1/2t garlic powder</p><p style="text-align: center;">1/3c nutritional yeast</p><p style="text-align: center;">1T German mustard</p><p style="text-align: center;">1 15oz can pumpkin purée</p><p style="text-align: center;">1/4c whole wheat bread crumbs</p><p style="text-align: center;">1/4c grated parmesan</p><p style="text-align: center;"> </p><p style="text-align: center;">Preheat oven to 350.</p><p style="text-align: center;">Prepare pasta according to instructions, drain & set aside. </p><p style="text-align: center;">Whisk together milk, arrowroot powder and garlic in a bowl.</p><p style="text-align: center;">Melt margarine in a sauce pan. Whisk in milk mixture and let simmer for 2-3 minutes until it begins to thicken. Stir in nutritional yeast and mustard. Cook for 5 minutes. Mix in pumpkin purée and heat until warm.</p><p style="text-align: center;">Mix together breadcrumbs and parmesan. Set aside.</p><p style="text-align: center;">Combine sauce and pasta. Pour in a greased casserole dish. Top with breadcrumb mixtures. Set aside.</p><p style="text-align: center;">In your Nutribullet, combine jalapeño, yogurt, lime juice, evoo, salt, honey, garlic, and scallions. Blend until smooth. Add cilantro and only blend until you have small green flecks in the dressing. </p><p style="text-align: center;">Toss dressing with salad and serve immediately. In your handy nutribullet, pulse strawberries only until chunky. It only takes a few seconds! Bring strawberries, chia seeds, and maple syrup to a simmer in a saucepan. Cook on low until jam thickens to your desired consistency. Remove from heat and stir in vanilla. Pour into a sterilized pint size canning jar. Seal canning jar in a bath of simmering water. On Thursday of last week I decided I needed to push myself and see how long I could actually run for. I set my timer for 30 minutes and I did it! I ran about 5km in that time with a 5 minute walk at the beginning and end to warm-up and cool down. B made crawfish jambalaya last weeknd. I would share the recipe but that would require him typing it out. For now, the jambalaya recipe remains a secret. A delicious secret. We added smoked turkey sausage to the leftovers to make lunches for the week.</p><p style="text-align: center;">2. On Saturday I made dinner without cooking. Sometimes a good kale salad with charcuterie is all we need!</p><p style="text-align: center;">3. I used one flat of strawberries to make jam. I still need to buy another flat to make more for gifts but I was really happy with how it turned out.</p><p style="text-align: center;">4. Did you know there are Stanley Cup Oreos? You can take a girl out of Canada but you will never get hockey out of my blood.
