Rumor has it there are some readers who have noticed I have been MIA. I started a new job a few weeks ago and needed some time to transition into my new position. In order to get everything done I had to take a break. I hope to fit in time to blog 3 times a week to start!
2 portobello mushrooms, sliced
10 baby Bella mushrooms, quartered
1 red pepper, cubed
1/3 yellow onion, chopped
corn tortillas, sharp cheddar & salsa
Preheat oven to 350. Combine evoo, mushrooms, red pepper, and onion in a large roasting dish. Cook for 30 minutes, stirring every 10 minutes.
Top tortilla with cheddar, roasted veggies & salsa. Enjoy!
