roasted veggies & sausage

I love when weeknight meals are quick and delicious. This one definitely fits the criteria. I do not want to spend the whole night in the kitchen after a long day of school. Ten minutes of prep, forty minutes in the oven, then straight to my bowl. That's my style.

1 red onion, chopped

2 small sweet potatoes, cubed

1 green pepper, chopped

1 yellow squash, chopped

4 smoked sausages, sliced (we got ours at Sam's)

evoo, salt, and pepper

 

Combine all ingredients in a large bowl. Toss to coat. Bake in a large roasting dish for 40 minutes at 400.

The leftovers from this dish were also amazing. That's another criteria for a great weeknight meal, something we can eat for lunch for the next few days. Meals like this usually happen on Wednesdays based on our schedule... but spring semester ends this week (not like I am counting) so that means our schedules will change... but our healthy eating shall not!
