things I don't do

Happy April! This year is flying by! April is an exciting month as we have spring break and a great Easter dinner planned with friends!

The world is an interesting place. With Facebook, Pinterest, and blogs it always seems to be able what  you "do". It is a competition? Or do we just really like to share? What I share with you is only a very small portion of my life. Seriously, I do more than cook, shop, take photos, and travel to exotic places. I saw a post recently on The Balanced Life about the pressure to do more. Along with everything I do, there are many things I don't do:


1. I don't keep plants alive. I try but then I forget, neglect, and they die. I buy small plants and flowers to add color to my life. When they die, I go to Trader Joe's and buy more.

2. I don't always eat fresh vegetables. We always have frozen broccoli and green beans in the freezer. I also really like canned artichokes. It's better to eat frozen/canned veggies than no veggies at all. Convenience wins some days.

3. I don't run fast. I may be working on my running skills... aka ability to run for more than 5 minutes at a time. Slow and steady wins the race for this girl. When I go to classes at TREAD I can sprint on the treadmill at 10mph for 30 seconds like it's my middle name but I prefer a leisurely jog.

4. I don't wash colors separately. Laundry is simple: Lululemon and other. Other consists of everything. Purple scrubs from work? Yes. White t-shirts? Yes. Just wash it on cold and 99.9% of the time it comes out fine. Convenience wins again. I did not get these skills from my mother...

5. I don't make my own coffee. We don't even own a coffee maker. I love coffee and B loves tea so most mornings we stop at Starbucks. It's our tradition and we think its worth the money as it is something we enjoy.

And you know what, its not a big deal. You don't need to do everything. My world continues to function successfully every single day because I don't try to do everything. The things I choose not to do allow me to be successful in so many other areas in life!

Now that you know everything I don't do, I am proud to share some things I do: practice yoga and pilates, run, cook, knit, teach, sleep 8 hours a night, stay on budget, and nap. I also have 3 part-time jobs that I love, am finishing my MS degree, passed the national OT exam very recently, and continue to work on research at the university. I love what I do and I make sure I do those things well!

j.crew wishlist

I am obsessed with neutrals and green lately. Conveniently, J.Crew came out with their fall line last week and there are some great pieces in my favorite colors that will transition well into fall in the south... and by that I mean 4 more months of summer. By that time I will be ready to go to Mexico and will still be able to wear all of these great finds!


I also saw this amazing emerald collection bridesmaid dress that I love. Not practical... but amazing. Then again I do have 2 weddings to attend next summer?!?

pool time

One of the things I love about our current place is the pool. I like having pool access any time I please. The first few times I went I always forgot something at home. Like any other area of my life I decided to make a list of things to bring. Here's whats on my list:


Some other things I bring with me include a hair clip, my dissection textbook, my iPod with some great music. 

Time to go get some sunshine & underwater exercise to stay cool.

the plan of the week

Our plan this week is different than most. Why, you may ask? Well, its march madness which means compromise. Since we do not have cable we will probably spend more time eating dinner at local establishments that have televisions... aka sports bars.  I have lots of writing to get done this week so I may skip out on some dinners out and just have Smoothie King. BTW - I am currently obsessed with the strawberry gladiator with mango and papaya. Yum!

Here's what we do plan to eat... and what we are unsure about:

Wednesday -  cheeseburger casserole

Can someone please bribe me to sit at the computer and get my homework done. I need to write a 7 page paper and work on an article for my thesis/ independent study. I just have so much trouble sitting down and staying focused. Any advice? I seriously need to be bribed into getting some things done.  I prefer my bribes in Lululemon, J.Crew, and shoes. I did find some new sandals I like... while procrastinating. Yup, no focus for this grad student. On a positive note, I did finish a research proposal draft that was 10 pages. One success at a time.

What are you eating?

Its another busy week in our house! Luckily, part of my birthday shopping extravaganza included grocery shopping. 


Here's what is planned for the week:
Monday - broccoli mac n cheese (we seriously just add broccoli to our KD)
Tuesday - protein shakes
Wednesday - shitake bolognese
Thursday - out (location TBD)
Friday - vegetarian flatbread pizzas

Notice a trend? Vegetables, vegetables, and more vegetables! Yum! I really did not plan every meal to be vegetarian (okay, the soup has sausage) but I am very excited about our meal plan this week.

Other interesting things for the week:
a hair color - still need to decide what I want to do
a furniture delivery!
lots of reading (not so exciting or interesting)
I currently have 2 papers and a research proposal on the go right now.
oh, and I get 120 assignments at 6pm today to grade :(

Mardi Gras celebrations have already started here. There is so much king cake around and I have not had a bite yet! I did not even know I had this much self control. Secretly, I just do not want to get the baby and have to buy the next cake... I'd rather spend my hard earned money on vacations and clothes! Selfish? Yes. But the motto keeps me away from that darned king cake.

Meal plan for the week

It's time to go back to school... that means busy weekdays, productive weekends, new classes, and new years goals. 
This semester I have 2 classes, an independent study, I will be teaching 3 sections of Zumba and working as a TA for a class. I am also starting a new volunteering position (more about that in the future) and hopefully going back to my part-time job. My busy schedule means time we need to be organized with our meals so we eat healthy and always have lunches available! Here's what's for our meals this week:


breakfasts - green juices & Lara bars
lunches - leftovers or swiss chard wraps

Monday - baked sweet potatoes with veggies
Tuesday - protein shakes (Tuesday is our late night this semester)

2013 New Year's Resolutions


Let's talk about new year's resolutions for a moment before I get to mine. Did you know last year the top 10 new years resolutions were to lose weight, get organized, spend less, enjoy life to the fullest, stay fit, learn something exciting, quit smoking, help others life their dreams, fall in love, & spend more time with family. How many of you reading this had one of those resolutions (whether you wrote them down or are even willing to admit to it)? How many kept their resolutions? Did you know, on average, it takes a person 7 tries to quit smoking? I bet that statistic could apply to many other lifestyle changes as well. What does this mean? Keep trying! I bet I have had lose weight on my new year's resolutions list since I started making resolutions. Have I always lost weight? No. Have I sometimes lost weight? Of course! I know I am not good at keeping a static weight, so if I try to lose, I have less of a chance of doing the opposite! 

But what is the most successful strategy for goal setting?

SMART goals!
specific, measurable, attainable, relevant & timely

Write down specifically what you want to do! Share it with someone, it keeps you accountable... that's why I am choosing to share mine with you today. If you need someone to keep you accountable, feel free to leave your resolutions in the comments below or email them to me privately, I promise I will not share!
Make sure it is measurable, if you want to lose weight, how many pounds or what body fat percentage do you want to lose? If you want to be able to run longer, how far do you want to be able to run without stopping? Do you have a specific race in mind to run? Do you want to get better grades in a specific class? What grade do you want to achieve?
Is you goal attainable? You cannot lose 20lbs by the end of January in a healthy way, but you can lose 20 lbs by the end of 2013. Research says it is healthy to lose an average of 2lbs per week. If you lose weight at a faster rate, you have a greater chance of regaining it.
Is your goal relevant to you? Or is someone else making you do this? You need to want to change in order to make the change.
Make sure your goals are time sensitive. What does this mean? Make yourself a specific timeline for when you want to achieve your goals. I would also recommend not trying to achieve everything at once. Are you a student or a teacher? Maybe you could save one goal for summer break rather than do everything in January. Just don't forget to put a reminder in your calendar!

Now what you have all been waiting for... my resolutions for 2013!



I will lose weight... 30lbs to be exact. 
I want to do this by July 1. How am I going to do this? Well, I already teach 9 hours of Zumba per week. My plan is to add more strength training, dailyhiit, and exercise classes (yoga, barre, & pilates). There is also a Living Social deal for Crossfit that I have 5 more days to purchase. It is something I have always wanted to try. Should this be the year I try it? I must remind myself not too much at once. I hope to add one class per week plus 2 times at the gym. But exercise is not everything in weight loss. I plan to make better use of my juicer as well as focus on vegetables and lean protein. 

I will brush my teeth 2 times per day. 
This is something I am not very good at... purely because I am lazy. Enough said.

I will keep my 4.0gpa.
After my first semester of graduate school I attained a 4.0gpa. I want to keep up the hard work as I now know this is something I am capable of doing. I always know my grades throughout the semester, and with three semesters coming up this year, I will have many times to keep this one in check. 

I will publish 1 academic article. 
My goal is to have it submitted to a journal by the end of the spring semester... if not earlier! I have one class this semester dedicated to this goals so this is very attainable. 

I will run a 5k race.  
Running has always been a struggle for me, especially outdoors, so I will have to work hard at this one. I will need to work on this in the spring and fall outdoors as well as indoors in the summer because of the heat. My plan is to slowly tackle a 5k running planning from a women's running book I own. I have not picked a race I would like to run yet but I imagine it will be in the fall. 

I will become a better Zumba instructor. 
In September, I became certified in Zumba instruction and teach 3 sections of Zumba for credit at LSU. I want to improve in the areas of creativity, energy while teaching, and class design. 

I will sell some old books. 
Since we moved last winter, we have realized we can live with way less than we thought. To me, less clutter = zen so we want to continue to purge some things we have in excess, like books. I want to find somewhere to sell them rather than just give them away. I also need to remember this applies to magazines so I need to be better at recycling editions that are more than 6 months old and finding articles I liked online to pin to the most relevant Pinterest pages.  

Finally, I will improve my blog. 
How? I am not sure. I have a book on blogging that I bought a year ago... still have not read it! But I plan to read it in Mexico. I want to find my niche in the blogging. I love to blog about everything I love, but I feel as though I need more direction. Any requests of things you like to read about? This one I will need to update in the future. 

Doable? Yes! I feel I have a good balance of personal and academic goals to keep me going for 2013!

An investment

I'd like to dedicate this post to my father, the guy who has previously invested in real estate and always love to check out how much houses cost in different places he goes. Well dad, I did some looking over seas and found some great places to purchase. Let me show you:

 Here's a 4 bedroom, 4 bathroom house with 3 cottages in the Lake District of England. Its only 1.5 million pounds...

We also found a 7 bedroom home in Dusseldorf, Germany going for 2.8 million euros...

Finally, we found a home in Cologne, Germany for 3 million euros...

I never said I was going to be realistic in my choices... kidding! But it is fun to see how expensive of homes you can find during your travels.

Vacation time

This morning we leave for Europe for 2 weeks! Its not fully a vacation; B is doing a lecture, I am presenting my research project, and B is teaching for a week. It going to be productive but fun, and hopefully we will have some time to relax too.

P.S. It is gutsy to take our British friend my homemade satsuma marmalade? Is the UK not the birthplace of marmalade? I feel like the queen may have invented it.

My packing list: 2 weeks in Europe!

We are off to Europe tomorrow! I have been contemplating my packing strategy for weeks. I only want to take 1 carry on and 1 large rolling suitcase. We have quite a few flights and trains so I do not want to have too much stuff! Thank goodness for Pinterest and some of my favorite fashion bloggers. I have been looking at outfit ideas and have created a board with outfits I hope to take with me.

I used to just pick out pieces I wanted to wear and throw everything in a suitcase when I traveled. When I got there I would always say, I wish I had this ____ with me. Now, my strategy has changed. I now plan outfits with pieces that can be mixed and matched to get the most out of my suitcase space. Here are some ideas:

This week I downloaded a bunch of free books from iBooks to read but I always like to have a paper one in case my eyes do not like reading on a screen. Oh, and my Germany travel guide!

Packing according to Martha

Recently I had a chat with my pal Martha about parking for a 2 week trip to Europe. By chatting I mean reading this article and by my friend I mean Martha Stewart. She has been making frequent appearances into my life lately when it comes to cooking, making marmalade, cleaning, and now packing!

Here's an exact except from the link about what Martha told me to pack:


How to Pack a Suitcase for a Five-Day TripIn this suitcase, there is plenty of room for nearly a week's worth of clothing. The key is to keep everything in separate and neat bundles, while making use of the built-in compartments.
1. Sweaters: To maintain the shape of my knitted tops and chunkier sweaters, I line the back of each garment with a few sheets of acid-free tissue paper before folding. These items should never be stored on hangers, either at hotels or at home; doing so can cause the fibers near the shoulders to stretch.
2. Footwear: Shoes are usually the heaviest cargo in a travel bag. To prevent them from crushing delicate clothing, I tuck them around the perimeter of the suitcase. Each pair is kept in an individual drawstring-topped shoe bag. I stuff the toes of my pumps and other dress shoes with acid-free tissue paper; socks go inside sneakers and slides.
3. Assembled Outfits: To streamline both packing and dressing on trips, I plan my outfits ahead of time, complete with shoes and accessories. I put each outfit on a single hanger (unless the top is a sweater) and wrap it in plastic.
4. Accessories: In addition to packing my shoes in pouches, I also place belts in one bag, undergarments in another, and tights and leggings in yet another. This ensures that the suitcase stays organized, even in the rare event it is searched at the airport.

Tangle-Free Chargers: These days, traveling means toting around a lot of electronics. I pack each charger separately in a labeled resealable plastic bag so everything is visible and at my fingertips.

Computer Protection: Laptops have to be taken out of their cases at airport security checkpoints, so I keep mine in a jumbo resealable bag to minimize handling. The power cord goes into a smaller bag.

Light, Easy Reading: I carry my Kindle, which lets me scan an array of books and newspapers, and my cashmere scarf with me on every trip. I also bring my toiletries (in containers that hold less than 3 ounces), a change of clothes, and my contact lens container and solution, just in case I am separated from my luggage.

Uncluttered Carryall: A messenger bag is roomy, can double as a pocketbook, and holds everything I need. I rely on a few coordinating accessories, including a large, sleek walletlike clutch by Perrin, to hold miscellaneous items.

Instant Identifier: One trip to the baggage carousel is proof enough that nearly all suitcases look alike. A bright-green ribbon tied to the handle distinguishes each of my bags from everyone else's.

Security Measure: Many luggage locks are forbidden under security regulations. So I tie the zipper pull tags on my suitcase together with a piece of waxed twine. That way, I can tell if it has been opened.

To Relax or Exercise: Comfortable, breathable clothes are always good to have on a trip. I'll wear them on the plane during a long flight or save them for an impromptu hike or workout.

How to Pack an Ensemble for Traveling: My trips are always extremely busy, so I plan what I'll wear to each event to ensure that I don't take extra clothes. With this one-outfit-per-hanger system, wrinkles are minimized, and I can hang up items as soon as I arrive.
Step 1: Hang the bottom. First, you need a good dual-purpose hanger with metal clips and a secure grip. Attach a pair of jeans or pants or a skirt at the waist.
Step 2: Add the shirt. Slip the top onto the hanger, covering the bottom piece. If possible, keep all the buttons closed so that the shirt and collar will lie flat.
Step 3: Fold and wrap. Place the outfit facedown on a bed or a table. Tuck the pant legs under, creasing at the knees or in thirds. Then fold in the shirt's sleeves, and make a final fold at the bottom to fit inside the suitcase. Slip a clear plastic garment bag (you can use one from a dry cleaner) over the entire bundle, tucking in any excess plastic.

What! I do not think I own that many plastic bags. I mean, I know I am organized but this takes it to a whole new level. I find it kind of inspiring. Is that weird? Come back tomorrow, I will tell you how I am fitting 14 days worth of clothing into one suitcase with only one carry-on planned!

When your meal plan changes

We had a great meal plan for this week... then we changed all of it! We have leftovers from Thanksgiving... and leftovers from all of our coupons we got at Sam's Club! That's right, we finally got a Sam's membership. I actually purchased it through Living Social. It came with coupons for 2 boxes of cookies, a rotisserie chicken, and a large pizza that we could only get on the day we signed up for our membership.  The leftovers on top of the leftovers we already had made for a small grocery bill which was nice.


Here's what we plan to eat this week:
Sunday - pizza
Monday - leftovers at the university (last Monday night class of the year for both of us!)
Tuesday - turkey chili
Thursday - Walk Ons
Friday - tortilla soup (I have the best recipe from our fave place in Mexico!)
Saturday - TBD

With all of the grading I will have on my desk my the end of the week (15 group projects, 105 finals, and 130 assignments) I know I need to get my workouts in early. Since I have lots on my plate I imagine I will be doing some Bodyrock workouts... get a great workout in 12 minutes! I call it productivity at its best! I also hope to go to Body Factory on Saturday morning as they are having an open house... free workout!

Happy Thanksgiving #2!

I am thankful today, and everyday for:
a home to live in
B & our families
all of our friends all over the world
education
health
& happiness

This is our second Thanksgiving this year since we celebrate both Canadian and American holidays in our home. We get a 4.5 day weekend to relax, get ready for our vacations, do work, and eat some great food with friends.

Kidding! Turkey toques are not really my style.

We have a delicious meal planned as we are having friends over for dinner:

Vivaaaaa Las Vegas!

We spent the weekend in Vegas for a family weekend. It was a great time and we really enjoyed seeing my fmaily.

 Lunch in Houston! We love Le Grand Comptoir wine bar. They have excellent food, this time I choose the margarita pizza and a glass of red wine.

I love all the sights in Vegas. There is just so much to see and do. Here is the Bellagio fountains, The Strip, the view out our window at Mandalay Bay, driving past In N Out Burger, and Excalibur!

That's it friends. That was our quick weekend away in Vegas. I could go back to that city so many times. There are so many pools to hang out in, so many shows to see, and lots of great restaurants. Now to plan our next vacation... we leave in less than a month!

Leftovers... its what's for dinner

This week is a great one... back from vacation, only a couple days of school, and a long weekend! Here's what's on the menu for this week:

Thursday - Thanksgiving dinner
Friday - turkey leftovers... of course
Saturday - ND football game... out to dinner!

Other things for the week: I have it on our to-do list for Thursday to walk around the lake. I wrote it down so now it has to happen. I also need to do homework and work on my Christmas crafts and baking! It will be a busy one!

Enchilada challenge

We love Mexican food. We love healthy but simple weeknight meals. We are also going to Mexico soon... clearly all of these things are related to the fact that we cannot stop making enchiladas for dinner! I like to call it our enchilada challenge. About every other week we have been making a different variety. My challenge to us was to continue with the simple, healthy, and budget friendly meal without ever repeating a recipe.

So far our favorite variations have included:
leek & yellow squash
leftover turkey and broccoli
mushroom, goat cheese & zucchini

Here's what we do to make ours:
sautee veggies (and meat)
mix veggies with a big of enchilada sauce from a can (we use both red and green)
coat bottom of baking dish with sauce
fill tortillas with veggie mix, roll, and place in baking dish
repeat until full and veggies are used up
cover with more sauce
cover with cheese
bake in 350 oven for 25 minutes.

This has also been a great way to increase our veggie content and have meatless meals!

Teach me something: correlation vs. causation

Here's a fact we learned in both research methods and stats this semester:

correlation does not equal causation

Let's apply this to real life:
There is a strong positive correlation between a new catalog and line of clothing at J.Crew and me pinning everything I love on Pinterest. Let's take a look of some of those items that happen to be released in stores tomorrow:


Luckily for B there is not a causal relationship between all of these things being pinned on Pinterest and a decrease in our bank account/ everything finding its way to my closet... I know better. But I can still dream. 

Does Pinterest feed my addiction of shopping or better allow me to pin everything I love then think about it until it is sold out and therefor do not buy everything I see? I prefer to hope the latter.

InstaFriday

TGIF! Its been a busy and productive week! At first I thought I took a ton of photos on Instagram this week when I remembered I forgot to blog last Friday! So here's a recap of the last 2 weeks in photos:

 1. Check out our orange tree! The satsumas are delicious and make some amazing juice! 2. Check out the cute turtles suntanning by the lake! The wildlife at LSU lake is great to see everyday morning. 3. I made a trip to the LSU foundation for some Christmas gifts. Yes, I am almost done my Christmas shopping! 4. Satsumas and lavender tea... not together, but both delicious.

5. Just a date at Bin 77. We love the flatbread appetizers on the happy hour menu. 6. I decided to straighten my hair the other day. It sure is getting long! I forget it grows quicker down here. I think I am due for a trim. 7. Our first Christmas cups! Unfortunately, they do not have Joy tea yet... but soon! 8. A glass of New Zealand pinot noir... as recommended by a friend. It was a great recommendation.

 9. My J.Crew outfit of the day. I love my lime skirt with a cozy sweater. 10. The night I made artichoke olive ravoli with butternut squash sauce (and some cheese)... oh and a side of tomato, basil, mozzarella salad. It was fit for a president on election night! 11. This has been on my to-do list for a long time... since January... and I finally bit the bullet and got it done. My application went in to NBCOT. Lets all say a prayer they accept my application and I can work again as an OT south of the 49th parallel. Seriously, I need all the help I can get. Now all I can do is wait. 12. Some J.Crew inspiration one morning. I love the monochromatic green look!

13. Legit research: negative ads make people less likely to vote. Then why do they show so many negative ads on TV? 14. Some Little Cesar's to bribe me to work on my statistic paper.
