We love Mexican food. We love healthy but simple weeknight meals. We are also going to Mexico soon... clearly all of these things are related to the fact that we cannot stop making enchiladas for dinner! I like to call it our enchilada challenge. About every other week we have been making a different variety. My challenge to us was to continue with the simple, healthy, and budget friendly meal without ever repeating a recipe.
So far our favorite variations have included:
leek & yellow squash
leftover turkey and broccoli
mushroom, goat cheese & zucchini
Here's what we do to make ours:
sautee veggies (and meat)
mix veggies with a big of enchilada sauce from a can (we use both red and green)
coat bottom of baking dish with sauce
fill tortillas with veggie mix, roll, and place in baking dish
repeat until full and veggies are used up
cover with more sauce
cover with cheese
bake in 350 oven for 25 minutes.
This has also been a great way to increase our veggie content and have meatless meals!
