perogie night

I cannot believe I have not shown you these photos! One night we got together with a bunch of friends to make perogies from scratch! We all brought different fillings and made tons of perogies! Instead of boiling them we baked them in the oven! Unfortunately, I already forget the recipe. Next time I will have to write it down.

P.S. Happy 4th of July! I'm at work all day so I do not have any plans for the holiday.

Happy Friday! It's the unofficial start of summer... although our weather has been quite hot for the past month. Today I am skipping out of work early to hang out with B, we have a wedding to go to tomorrow, and Sunday to rest! Here are some highlights from the past weeks:
1. Final exams could not be here quick enough this semester! For me & my students...
2. B and I have kept up our running and walking since lent. We are trying go log 100 miles in the 8 weeks before summer! We are half way there!
3. Graduation flowers from my parents, grandma & brothers! What a fun surprise at the door!
4. B & I at graduation. His outfit is so fancy! I am officially done my MS degree! It's so nice to have have achieved that accomplishment.
5. Then we celebrated at The Blend with wine, chilled tomato soup and shrimp & grits!
6. I started taking classes at Pure Barre. My crazy schedule has not allowed me to be as consistent as I would like to be but I have been enjoying the workout when I can!
7. I had my first day of work this week as an OT in 2.5 years! It kind of seems surreal to be back after working so hard to get my license since moving. I got to shadow some amazing therapists. For now, I am taking on PRN work at two amazing rehabilitation hospitals until I find something full time!
8. Love this girl! She is just so cute and loves to hang out in the sunshine!

nino's celebration dinner

We went to Nino's for a celebration dinner on Saturday night. More about the celebration later, let's talk dinner. We have been meaning to go to Nino's for a while now as we have heard great things so we figured it would be the perfect place for the occasion. We made reservations as we knew it would be busy on a Saturday night. By making reservations I mean I called at 5:15 to get in at 6! You would not want me to plan too far ahead when it comes to picking out what I want to eat.

We shared a bottle of super Tuscan wine and had Gino's house salads to make sure we get our vegetables. For dinner I had the ragu with duck confit and spring vegetables over rigatoni. My entree was absolutely delicious! We had the oatmeal chocolate chip cookies for dessert which were fresh out of the oven, warm, and gooey. The service was excellent so we know we will be back again!

P.S. Happy cinco de mayo! We have a busy work day then plan to make shrimp taco salad for dinner!

running for lent

Happy Monday! How was your Easter weekend? Now that the lent season is over, how did you do on your Lenten sacrifice? Since I took up running rather than giving up something I thought I would let you know how it went.

We have been following the couch25k app and we made it through 6 weeks. On Thursday of last week I decided I needed to push myself and see how long I could actually run for. I set my timer for 30 minutes and I did it! I ran about 5km in that time with a 5 minute walk at the beginning and end to warm-up and cool down. I plan to continue the running 1-2 times per week and integrate some other activities back into my schedule.

Can I consider myself a runner now?

Happy Friday! Also, I must add Happy Easter! It's nice to have a long weekend to relax and get some things done from my never ending list. With spring break coming to an end it will be nice to be refreshed for the last 2 weeks of the semester! Here are some highlights from my week:

1. B made crawfish jambalaya last weeknd. I would share the recipe but that would require him typing it out. For now, the jambalaya recipe remains a secret. A delicious secret. We added smoked turkey sausage to the leftovers to make lunches for the week.

2. On Saturday I made dinner without cooking. Sometimes a good kale salad with charcuterie is all we need!

3. I used one flat of strawberries to make jam. I still need to buy another flat to make more for gifts but I was really happy with how it turned out.

4. Did you know there are Stanley Cup Oreos? You can take a girl out of Canada but you will never get hockey out of my blood. And who does not love Oreos?!?

Have a great weekend! We hope to get outside for some exercise everyday, make more jam, and have an Easter dinner planned with friends on Sunday night.

Happy Friday! How was your week? Mine went by so quick. It's officially spring break (too bad I am not in class anymore and still have to work but I don't have any teaching responsibilities for the next 11 days)! I've got to be quick as I am currently making oatmeal for breakfast then I am off to start my day! Here's some highlights from my week:

1. My lunch was famous... kind of. We are working on updating a program at work so my healthy lunch became the test subject for photos!

2. We made cauliflower fried 'rice' on the weekend. It was sooooo good!

3. We also made Thai inspired chicken noodle soup. Hopefully I will be able to remember what we put in it so I can share the recipe next week.

4. I had 3 great runs this week. The beautiful weather sure helped along with my tunes and a comfy pair of shoes.

Have a great weekend! The weather is supposed to be great here so we may go to the Baton Rouge Blues Festival and the farmer's market.

Happy Friday! This week flew by! I am excited for another weekend of relaxation, hopefully some yoga, and maybe a run if it des not rain all weekend. Here are some highlights from the week:

1. My new permanent resident card arrived in the mail. What a great photo! I did not know government documentation could arrive with such a well taken photo.

2. I am obsessed with my jorts. I have a feeling these will be worn a ton this summer! Okay, let's get real, it already feels like summer here and I have been living in my jorts.

3. Homemade shrimp & grits. My fave!

4. We went on a date to Bin77 last night. The wine was great, the service was great, and once again, I had shrimp & grits. I am starting to really love this southern living thing.

Happy Friday! This week went by too quick. I think we only have 4 weeks of class left, that's crazy! Here are some highlights from my week:

1. I have been feeling very black, white, & grey lately. I am not sure why I am obsessed with this combo but I cannot get enough!

2. Kale ceasar salad with sautéed crawfish on top! This was delicious.

3. My running buddy aka B has been keeping me going lately. Never let's me miss a day and sometimes even requests I run twice in a day so he can have someone to run with!

4. My couch to 5k app along with Rock My Run remixes keep me going. I like having an app to tell me when to run or walk while listening to my fave tunes. I highly recommend both!

Happy Friday! Better late than never, right? After this week I am happy to have a weekend to relax. Here are some highlights from last week:

1. We went to the St. Patrick's Day parade last weeknd. It was lots of fun, so much fun I had to have a 2 hour nap in the afternoon after all the bead catching.

2. B has been trying new smoothie recipes this week. The best was chocolate pb banana!

3. I have a good friend who is moving north for school. I made her one of my scarves as a going away gift!

4. I made gluten free double banana oat muffins this week. I shall share the recipe on Monday so come back!

Have a great weekend! Hopefully mine will be filled with yoga, naps, and relaxation. Everything a weekend should be filled with.

Happy Friday once again! I had a good week, nothing too exciting but overall enjoyable. I worked, I taught, I ran, I did pilates. Here are some highlights:

1. I have been running all week for Lent. On Monday I surprised myself and ran 2 miles straight on the treadmill! I was not fast by any means but I did it. I took it one minute at a time, finished a mile and decided I could do another!

2. My taste buds have been loving new foods. I have really been into stuffed green olives and mini pickles lately. No, I am not pregnant. I had wine with my pickles.

3. My husband knows me so well. Who does not love big hair and poodles? Clearly when my hair is big I am closer to heaven.

4. My yearly birthday flowers from my parents! It's always so fun to have flowers delivered on your birthday!

Happy Friday! I was thinking this week went by really fast but then I realized it was a 3 day week. It was a productive week so I enjoyed that too. Here are some highlights:

1. I went to a mat pilates class put on by Lululemon and Studio7. I always forget how difficult mat pilates is until I actually participate in a full class.

2. A great hair day deserved a selfie. I still love my new haircut!

3. Brrrr. Enought said.

4. It's official, all one year old girls need a pink tutu for their first birthday party. So cute!

5. I love stripes, navy and my NB runners. Why not combine all 3?

6. I really like shopping at The Container Store. Truly, I just love organization and this place has everything I could ever dream of when it comes to keeping things in their place.

7. The Tasting Room is definitely one of my fave places to get wine. I really love that I can sample everything before I make a choice.

8. Running for lent has been successful thus far. 2/40 days are complete!

Do you have any big weekend plans? I am going to mat pilates on Saturday then out to dinner as it happens to be my birthday weekend! I am not sure where we are going but it will be nice to have a night out in BTR. Have a great weekend!

Houston recap

I thought I would share some highlights from our houston trip with you. I had a 6 hours pilates course so most of the weekend was spent shopping, going to our fave resturants, trying some new places, and relaxing.

Happy Friday! How was your week? Here are a few highlights from mine:


1. We went out for dinner and to watch the Olympics last weekend. It was perfect! I love the Olympics and wine so it was a perfect match!

2. I passed the OTR exam! I wrote the exam on Saturday morning and got the unofficial results back yesterday. I was so excited that I passed it on the first try. What a relief. I celebrated by going to spin class.

3. We made a kale ceasar salad this week. It is our new fave way to eat kale. You should try it sometime.

4. I have been cheering on Canada for the past 2 weeks. We have had some intense moments but it has been so fun to watch! I'll be sad when the games are over.


Have a great weekend. Mine will involve going to a pilates class, knitting, and relaxing at home. Hopefully the weather continues to be nice so we can spend some time outside.

Happy Friday! How is it Friday already? This week went be so quick... especially considering we finally had a full week of classes. This week we finally got on a schedule! Here are some highlights not related to work or school!

1. My new burgundy New Balance shoes came in the mail. I am obsessed!

2. We made chicken with mushrooms and pan sauce along with steamed green beans this week. We love this dish.

3. Sometimes I want a burger but not the bun. Sometimes I want a salad. Fat Cow knows how to make it happen by serving salads with a burger patty on top. Yum!

4. We received new Sophie Conran dishes as Christmas gifts this year. We added 4 pasta bowls and a large mixing bowl to our collection. I love these dishes!

yoga - last night at hot yoga I touched my toes while seated... something I have not done since before I started my MS degree, it's been great to be back at yoga classes more often

Happy Friday! Or maybe Saturday since I am posting late. Yesterday was a busy day after a short week but I am handful it is the weekend again. Before I head off to yoga sculpt I thought I would share some of my fave photos from the week with you:

1. Our snow day... or as I would call it: it barely snowed so everything is closed day!

2. Dinner of homemade sweet potato fries from our new mandoline, asparagus, and smoked salmon that was also a Christmas gift!

3. Anchovies stuffed green olives! I bought these for B but I really liked them!

4. I have been going to pilates at Studio7 and loving it. I am a big fan of equipment pilates classes and this new studio is fully equipped to challenge me throughout my entire workout.
