cucumber salad with roasted chickpeas

I find the best recipes online. Seriously. 
Sometimes those recipes come from vegan blogs. Those are the ones B raves about for days... I think he is a closet vegan.


This cucumber salad was amazing. Honestly, I am not going to give you the recipe because I copied it exactly. You should just head on over to Oh She Glows and follow along yourself. This would make a great side dish or an entree. We ate ours as an entree and had multiple extra servings to eat for lunch.

My bowl was vegan...until I added some blue cheese crumbles. It was a great addition!

2013 New Year's Resolutions


Let's talk about new year's resolutions for a moment before I get to mine. Did you know last year the top 10 new years resolutions were to lose weight, get organized, spend less, enjoy life to the fullest, stay fit, learn something exciting, quit smoking, help others life their dreams, fall in love, & spend more time with family. How many of you reading this had one of those resolutions (whether you wrote them down or are even willing to admit to it)? How many kept their resolutions? Did you know, on average, it takes a person 7 tries to quit smoking? I bet that statistic could apply to many other lifestyle changes as well. What does this mean? Keep trying! I bet I have had lose weight on my new year's resolutions list since I started making resolutions. Have I always lost weight? No. Have I sometimes lost weight? Of course! I know I am not good at keeping a static weight, so if I try to lose, I have less of a chance of doing the opposite! 

But what is the most successful strategy for goal setting?

SMART goals!
specific, measurable, attainable, relevant & timely

Write down specifically what you want to do! Share it with someone, it keeps you accountable... that's why I am choosing to share mine with you today. If you need someone to keep you accountable, feel free to leave your resolutions in the comments below or email them to me privately, I promise I will not share!
Make sure it is measurable, if you want to lose weight, how many pounds or what body fat percentage do you want to lose? If you want to be able to run longer, how far do you want to be able to run without stopping? Do you have a specific race in mind to run? Do you want to get better grades in a specific class? What grade do you want to achieve?
Is you goal attainable? You cannot lose 20lbs by the end of January in a healthy way, but you can lose 20 lbs by the end of 2013. Research says it is healthy to lose an average of 2lbs per week. If you lose weight at a faster rate, you have a greater chance of regaining it.
Is your goal relevant to you? Or is someone else making you do this? You need to want to change in order to make the change.
Make sure your goals are time sensitive. What does this mean? Make yourself a specific timeline for when you want to achieve your goals. I would also recommend not trying to achieve everything at once. Are you a student or a teacher? Maybe you could save one goal for summer break rather than do everything in January. Just don't forget to put a reminder in your calendar!

Now what you have all been waiting for... my resolutions for 2013!



I will lose weight... 30lbs to be exact. 
I want to do this by July 1. How am I going to do this? Well, I already teach 9 hours of Zumba per week. My plan is to add more strength training, dailyhiit, and exercise classes (yoga, barre, & pilates). There is also a Living Social deal for Crossfit that I have 5 more days to purchase. It is something I have always wanted to try. Should this be the year I try it? I must remind myself not too much at once. I hope to add one class per week plus 2 times at the gym. But exercise is not everything in weight loss. I plan to make better use of my juicer as well as focus on vegetables and lean protein. 

I will brush my teeth 2 times per day. 
This is something I am not very good at... purely because I am lazy. Enough said.

I will keep my 4.0gpa.
After my first semester of graduate school I attained a 4.0gpa. I want to keep up the hard work as I now know this is something I am capable of doing. I always know my grades throughout the semester, and with three semesters coming up this year, I will have many times to keep this one in check. 

I will publish 1 academic article. 
My goal is to have it submitted to a journal by the end of the spring semester... if not earlier! I have one class this semester dedicated to this goals so this is very attainable. 

I will run a 5k race.  
Running has always been a struggle for me, especially outdoors, so I will have to work hard at this one. I will need to work on this in the spring and fall outdoors as well as indoors in the summer because of the heat. My plan is to slowly tackle a 5k running planning from a women's running book I own. I have not picked a race I would like to run yet but I imagine it will be in the fall. 

I will become a better Zumba instructor. 
In September, I became certified in Zumba instruction and teach 3 sections of Zumba for credit at LSU. I want to improve in the areas of creativity, energy while teaching, and class design. 

I will sell some old books. 
Since we moved last winter, we have realized we can live with way less than we thought. To me, less clutter = zen so we want to continue to purge some things we have in excess, like books. I want to find somewhere to sell them rather than just give them away. I also need to remember this applies to magazines so I need to be better at recycling editions that are more than 6 months old and finding articles I liked online to pin to the most relevant Pinterest pages.  

Finally, I will improve my blog. 
How? I am not sure. I have a book on blogging that I bought a year ago... still have not read it! But I plan to read it in Mexico. I want to find my niche in the blogging. I love to blog about everything I love, but I feel as though I need more direction. Any requests of things you like to read about? This one I will need to update in the future. 

Doable? Yes! I feel I have a good balance of personal and academic goals to keep me going for 2013!
Now its your job to keep me accountable.

Squid & spaghetti squash pad thai

If you follow me on InstaGram, you probably saw this on Sunday night:

 
Last weekend in Beaumont, we had a great pad thai. Then I saw a recipe for paleo pad thai on Carrots n Cake. Spaghetti squash instead of regular noodles? Brilliant! Especially since we had a spaghetti squash that needed to be used. There are tons of recipes out there for homemade pad thai sauce but I was going for convenience and I did not want to buy 20 ingredients so we purchased a bottle at Whole Foods.


Ingredients:
1 spaghetti squash, halved & seeds removed
1 carrot, grated
1 bag bean sprouts
8oz sliced mushrooms
1 bottle pad thai sauce
3/4lb squid tubes and tentacles
1/4c green onion tops, sliced
1/8c cilantro

Bake spaghetti squash in a 375 oven, cut side on the grates, for 40 minutes. Let cool, scrape out spaghetti insides with a fork.
In a large pot, saute vegetables with evoo, and spices of your choosing (we went with pepper, garlic, and asian essence). Add spaghetti squash and pad thai sauce, let cook for about 5 minutes. Add squid. Cook only until squid is cooked through. Makes sense, right? Serve family style topped with green onion and cilantro. 

This recipe actually made 6 servings. If I calculated correctly, all of the ingredients cost us approximately $17.50. With 2 dinners and 4 lunch portions that puts us at about $2.95/ serving. That's a great price for something full of veggies and fresh seafoood!

Oh, I also kept the spaghetti squash seeds and roasted them in the oven for an added snack:

Lately, I have been loving neutrals... all over my life. Clothing, home decor, food, crafts. Its soothing and addicting. Maybe its because fall is coming. Wait, I live in Louisiana... fall is still months away and the hottest months are about to arrive. Lucky for me, I need to take a sweater everywhere because southerners love their air conditioning.

Sweet potato gnocchi

I decided to do something adventurous last night. We love gnocchi... it is just so pillowy and good! How hard could it be to make? Well my day was complete when I found an amazing recipe for sweet potato gnocchi on Pinterest and knew I could make it myself... then I would not need to buy it for $9/ package (a tiny package) at Whole Foods.

We roasted sweet potatoes on the weekend and had tons of leftovers. I have been unleashing my inner creativity with leftovers this week so I knew they would not be consumed as roasted sweet potatoes for a second time. By the way - we roasted our sweet potatoes this way:
peel
chop into 1" pieces
toss in EVOO, chopped fresh rosemary, and pepper
wrap in foil packages
BBQ until tender

To make the gnocchi I did not need to do much more work! Not much work... but messy... hence the lack of photos while shaping the gnocchi.


Ingredients:
1lb pureed sweet potatoes - approx 2 cups
2 + 1/4 c flour (I used a mix of white and whole wheat)
1 beaten egg
1/4 t cinnamon
salt & pepper

Directions:
Puree leftover roasted sweet potatoes in food processor until smooth.  Add 1 beaten egg, spices, and mix together. Add approx 2c flour until mixed to a doughy consistency (you may need to add more or less). Knead a few times on a floured surface. Cut into quarters, roll each quarter into a long rope, cut into 1" sections, and let dry slightly on a parchment lined cookie sheet (you can freeze them at this point if you want to save them for later). I left mine as a rustic shape as I like the look and it is much less work! 
To cook, drop into boiling water, boil until all gnocchi have floated to the top. Remove with a slotted spoon and mix with desired sauce. We used basil pesto on half and butter with grated cheese on the other half!


Amazing!

We still have over a pound of pureed sweet potatoes left so I will be making more gnocchi to freeze tomorrow! If you come visit you may be lucky enough to enjoy some of these for dinner... or I will teach you to make them!

Easter pizza

We like to keep things simple around here. Maybe to save on calories, money, or time. Or all three. For Easter, we decided on pizza. Why? Because its just the two of us and if we want pizza... we shall have pizza, don't worry it was gourmet!

I have been lusting over this pizza since I saw it last week and knew it would be delish!


It was simple, easy, and delicious. Everything I could ask for on a beautiful Sunday afternoon. Early in the day I made the sauce out of EVOO, crushed garlic, and dried albanian sage. I also chopped and roasted the butternut squash in the oven and caramelized the onions. Later in the day, I made some of our go-to pizza crust (oops, forgot the chia seeds!), assembled the toppings + grated cheese and dinner was ready to cook. We decided to try something different and use the pizza stone on the BBQ. Although it tasted delicious, the bottom did get a bit crispy and we did have a fatality!


Our pizza stone cracked in half while on the BBQ. We did not hear it or even notice until the pizza was complete. It was very difficult to get off the grill but we were able to save the pizza. I guess my pizza stone will be going to stone heaven. Anyone know where I can get a new pizza stone that will work in the oven and on the BBQ?

Can't you just see me prancing around singing to The Sound of Music while I discover wonderful new things on Pinterest? What a great invention... but I have told you that before.

1. I love this tufted ottoman from Sow Kindness . I wish I could have it for my home! 2. I have been loving large clutches lately. I would really like one that fit all of my essentials and my iPad... clearly an essential. 3. I saw this pizza the other day and knew we needed to make it. Caramelized onion, roasted butternut squash and sage. What an amazing combo! I bet you will see a photo soon from my table! 4. You can  never have enough loafers! They go with everything and are soooo comfy! 5. I am half way through MWF seeking BFF and loving it! I am reading it on our iPad. So far it has convinced me I should join a book club... or get a job to find local friends! 6. Ultramarine blue and emerald green... love! Please find your way into my closet. 7. I wish I had a tabletop picnic bar in my backyard. What a great idea! 8. I had a dream last night that I owned this belt. Maybe we were meant to be together.

Sewing: basic curtains

I have been busy sewing these past few days. I wanted to make basic solid curtains for a few rooms in the house, specifically the living room and guest room. After getting some inspiration on Pinterest, I decided to go with a basic solid color using a skinny black rod and curtain clips. I thought I may want to go for grommets and a silver rod but after reading this post, I decided on simplicity. I also loved that this post called this style of curtain rod "eyeliner for the window".

I wanted something basic that would go with the colors of our rental house but could be used in other homes as well. I was very happy with how they turned out considering they were my first try at curtains and I did not use a pattern. Then again, who needs a pattern to make a rectangle? I really love the finesse they add to the room. Did you notice you still have not seen the other side of the living room? That's because there is nothing to see! Hopefully someday we will have furniture!

Once I became an expert at curtains, I decided to quickly make some navy curtains for the guest bedroom. I think they really make a difference in the room. I love navy, it goes with the bedding and wall color, and will work well to keep the heat out of the house in the summer.

Now my brother-in-law can come visit and sleep all day because he can block the sunlight with the new curtains.

When buying my curtains rods at Target, I got a 50% off coupon for 2 packs of curtains. The other day I spent some time there trying to get a vision for our dining room. I finally have decided on a color scheme and have picked a few pieces. I picked up my tablecloth since it was the last one but waited on the curtains. Once we have chairs and curtains, and can get rid of a sofa that was left behind, I'll post some photos!

My next sewing project is this:
I bought these chairs about 5 years ago at Urban Outfitters on sale for $10 each (originally $50 each!). I love these chairs but the covers are at the end of their lives and do not match the mint green paint of the sunroom. I found some material I want to use to make new covers but need to wait until next weekend as I have a coupon for 50% off at Joanne Fabrics. Oh and B got me a teacher's discount card to get an extra 15% off my entire purchase anytime. Who knew professors qualified for this discount?

Time to go! I have a few things to get done yet today!

Interesting notes from the day

Today has been an excellent day. Want to know why? Of course you do! 

1. This morning I got am email from The Daily Buzz Health Living Team stating I was featured in today's Top 9! What for you may ask? Well, fave fitness wear of course. Can anyone take a guess what my post was about... Lululemon! I  am obsessed but that is quite obvious if you read my blog, take a peek in my closet, or see me on any given day.


Even better... I was featured with some blogs that I read everyday, like The Fitnessista and Sweet Tooth Sweet Life. Thank you Daily Buzz!

2. I stopped by J Crew today, another obsession of mine. I could have bought one of everything in the store. Though I been loving the unemployed life, this was my motivation to get a job so I can afford their beautiful clothes. Even better yet, they should hire me so I can have $ to buy the clothes and get a staff discount. Great  idea! Here are some of my faves from the store:


There were so many amazing pieces in the store. Lots of solids, a few patterned pieces, and some great accessories. Maybe I will use some bday money to buy 1 or 2 new pieces. Must get job... I promise I keep telling myself this. I also need to take B when I go so he keeps me under control and he can use his educator card to get me 15% off!

3. Today I wore shorts. Why is this relevant? Well, yesterday I came up with the brilliant idea I should wear pants when it is +27 so +40 does not feel so hot when it happens. It seemed like a good idea until I walked out the door. Not such a good idea. I have still not adjusted to my warmer climate. The locals can wear pants, mine have been put away for the spring, summer and fall.

4. Tonight is date night. We are going to Target to buy curtain rods and to Cheeseburger Cheeseburger for supper. I need curtain rods as something exciting has arrived! You will hear about that tomorrow!

My Superfoods

Living in the south can be difficult for one reason... all the fried food. Okay and maybe the excessive rain too! We try not to eat out very much as the choices usually are not very healthy. To offset the times we go out for social events, we love to incorporate superfoods in our everyday cooking at home!

Here are some of my favorite superfoods.

Red berries: 
This week the choice was strawberries as they were on sale for $16/ flat!
Berries are loaded with vitamin C, folate, fiber and phytonutrients. Indeed, fresh berries are some of the most powerful disease fighting foods available. Berries are easy to prepare; just rinse and lightly pat dry. They are great as a dessert, a snack, or sprinkled on top of your morning porridge. This week I made strawberry bread:
But you must be patient, the recipe will be posted tomorrow so check back! I also made it healthier with rye flour and ground flax.
 
Chia seeds:
Chia seeds are rich in omega-3 and fatty acids, protein, vitamin B, calcium, potassium, and fiber. And no, you will not turn into a chia pet. I love to add chia seeds to things like the breakfast cookie and pizza crust!

Tomatoes:
Ever wonder how you can take tomato soup out of a can, add water and is still tastes good? Me too. But I also think there must be an easy way to make tomato soup from scratch! A while back I found the most fool proof recipe. It is simple, tastes good, and is easy to double or triple for leftovers! I hightly recommend trying it next time you want soup that does not come out of a can.
Tomatoes contain high levels of beta-carotene, antioxidant flavonoids and vitamin E. They provides 50 per cent of the recommended daily dose of vitamin C; they contain no saturated fatty acids, are low in salt, starch and sugars, high in dietary fibre and have a low glycaemic index.

Some of my other favorite super foods include blueberries, pumpkin, salmon, spinach, green tea, and yogurt. Hopefully this will inspire you to add some superfood to your everyday cooking!

Deja vu

{the experience of feeling sure that one has already witnessed or experienced a current situation, even though the exact circumstances of the prior encounter are uncertain and were perhaps imagined}

I feel like we've seen a similar post... it might have been yesterday. 
Yesterday I spent my day painting.
Little did I knot (until I was cleaning everything) I was using oil based paint. I had a nice white coat all over my hands that would not come off until we went out to buy mineral spirits. Miracle worker that one is... Don't worry, I took off my ring prior to painting. Might be the best decision I made yesterday. The sunroom trim is complete... now I just need to figure out what to use to paint the floor. Any suggestions?

I made another new recipe last night. I read this recipe a while back and knew I needed to try it since B bought a butternut squash. It is called Butternut squash mac n cheeze by Oh She Glows. Notice a trend? Vegan dinner for a second time this week! In the words of B: "if  you did not tell me where you got this recipe I would think it was filled with cheesy goodness". It was amazing. We absolutely loved it and think you would too. Please go make it asap then send me a thank you card... a great meal and great for you too!


I did my daily bodyrock workout again today. I would not want to admit that I skipped it... blog commitment is the best motivation ever!

Avocado pasta

Last night after running some errands, we made dinner. It was a new recipe for us... and definitely one we will keep for quick week night meals. 


Doesn't the sauce look creamy and delicious? Well folks, there is no dairy in it. No cream. No cheese. Nothing! If you check out the recipe you will see the creaminess comes from the avocado. Yes... my avocado that cost me 39 cents!

Don't be scared by the vegan label. I used to think all vegan recipes had tofu and were weird. I was wrong. We eat vegetarian atleast one day per week. I find meat to be over priced and very poor quality. This cuts down on the grocery bill and is good for our bodies too.

Bodyrock:
I did my bodyrock 30 day challenge workout this morning. It kicked my butt. I did the first portion in 28:39.2 and the ab portion with 17, 90, and 40 reps respectively.

Then I ate this:

InstaFriday

 It's been a busy week! I have travelled across the country and half way back. During my travels I love to see new things and try yummy food that's recommended either in travel books or online! Rather than showing you everything I ate (yes, I love to take photos of my food), I thought I would show you where I ate!

I went to: 1. Ferreira for carrot fennel soup, salad, and wine. 2. St. Viateur Cafe for a bagel. 3. Il Focoliao for vegetarian pizza. 4. Bagel du Faubourg for a bagel. 5. Reuben's for a vegetable sandwich and poutine. 6. Burritoville for a sweet potato burrito. 

 Here is a summary of my meal at Ferreira. 7. Amazing decor on the walls. 8. Carrot and fennel pureed soup which was amazing. 9. Red wine and water... always have to keep my beverages balanced. 10. Delish bread as a side.

11. This was the view from my hotel room. It was snowing like crazy one day. The hotel was great, the hardwood floored rooms were large, and the concierge was helpful with recommending places to eat. On the other hand, the wifi was very slow and the spa staff liked to use the workout facilities as their break room. Weird. 12. This was my bagel that came straight out of the oven with cream cheese! I love Montreal style bagels. 13. My fave fish at the biodome. It was so ugly but cute. 14. The old streets of Montreal are beautiful in the winter... the view was great... the sidewalks, not so much!

15. I love reading blogs and drinking tea. Have you read Urban Nester? I am a huge fan of this blog. 16. My huge hotel room in Montreal! The bed was sooo comfy. I slept very well compared to most hotel rooms. 17. I did a killer BodyRock workout to make up for the yummy food I have been eating. 18. If you are looking for a hard but short workout, give BodyRock a try. I took a screen shot of part of my workout. It kicked my butt. But it was a well deserved but kicking... I did enjoy a poutine all to myself the day before... not necessary but very delicious!

Work it wednesday: leopard loafers

I have been dreaming of loafers ever since my trip to Paris this past summer. They were everywhere! I should have taken a clue on this trend and purchased some there! Also, we have had unseasonably warm weather (I think I spoke too soon, I just looked outside and it is snowing) so I have been able to wear shoes rather than boots these past few months. I also hope to have permanently warmer weather in my life very soon!

Lately,I have been loving leopard loafers. Conveniently I have no room left in any of my bags for new shoes so I cannot buy any. Maybe soon...

Time to start saving my pennies. Or maybe I will find some in Montreal!

Work It Wednesday: lululemon cool raceback

To stay with the theme of new years resolutions... and to keep me motivated I thought I would a post on my fave workout wear... Lululemon! Specifically the cool raceback tank. I have it in 7 colors and they get put to good use with my daily workouts. I think its important to look good when you workout... although sweaty by the end. I also find that this tank reminds me to engage my core throughout my workout, which is an added bonus!

Work it Wednesday: black tights!

I have a new found love for Wednesdays thanks to Jill from Good Life for Less. I love getting new ideas on how to mix and match items that I already have on my closet. This has also created less of a need to shop!

I have been loving the look of black tights. I recently found a pair of black jersey tights by Calvin Klein on sale at The Bay. They are soooo comfortable. I use to hate tights but these have made me change my mind.  Okay, I should not lie. I also bought them in blue and olive as they were so comfortable and on sale. Now I need to find a way to wear the colored tights.

Inspired by

Today I am inspired by other bloggers. I love looking at fashion blogs, I feel it helps me dress better and be more creative with what is already in  my closet. This has meant less shopping & more saving... which equals a happy husband! He is so proud of my thriftyness these days.

Back to the task at hand. I am loving the sweater over a gingham shirt look. I thinks is a modern twist on a classic look that I could really pull off. I have a fitted gingham shirt and crew neck sweaters already... and who needs pants? Kidding. Depending on the day of the week I could definitely switch between black pants, cords, or jeans!

Poodle love

Did  you know I had a 90lb standard poodle growing up? His name was Jocko. Here is a photo of us eating lunch

Kidding! But he looked just like this... and was always sitting next to the table waiting for food to fall. Recently, I saw a photo on Rose a la Mode of a Poodle sweater from Forever 21.

Yup, a poodle sweater might be a great fall investment. Then again, I said I was not buying any new clothes for fall or winter. Hmmm. To buy or not to buy?

Tomato Gazpacho

This weekend I made a tomato gazpacho with fresh summer ingredients. It was delicious so I thought I would share it. I found it on The Galley Gourmet then made some adjustments based on what I had available.
 

My version:

3lbs ripe tomatoes or varying colours (I used black, red and yellow), core removed and cut into wedges
1/2 english cucumber, seeded and roughly chopped
2 small yellow peppers
1/2 yellow onion
4 green onions, green part only
1/4 c basil
2T oregano
1t nutmeg
10 cloves of garlic
1c tomato puree
1/4c red wine vinegar
3T evoo
1t salt
dash Mexican hot sauce

In large food processor, put everything except the last three ingredients, pulse until desired consistency. Add evoo, salt, and hot sauce, pulse a few more times. Cover and refrigerate for 2 hours to allow for flavors to blend. Serve in chilled bowls with a fresh basil leaf.

We also enjoyed it with ciabatta, roasted garlic, manchego, and red wine!
