Part of our meal plan last week was a BBQd broccoli pizza. We decided to make it in the oven for convenience sake. I made our typical roasted broccoli, assembled the pizzas and baked them until the cheese melted. It was an amazing, healthy vegetarian option.
2 stalks broccoli, steamed for 3 minutes then roasted in the oven for 20 minutes
4 naan bread
fresh mozzarella
evoo
grated Parmesan
pepper
Roast broccoli. Brush naan with evoo, top with fresh mozzarella, add roasted broccoli, grated Parmesan, and pepper. Bake in 350 degree oven for 20 minutes and enjoy!
So simple for a week day, makes enough for lunch the next day, and healthy too!
