smoked salmon egg casserole

I have a new recipe for you! We made this for dinner during the "snow storm". It was simple, flavorful, and very filling. We love eggs anytime of day which makes this dish versatile. B's aunt sent us smoked salmon from California for Christmas so this dish was extra delicious! The inspiration from the dish came from this recipe.

1c zucchini, diced

1c mushrooms, diced

1 green pepper, diced

1/2c spinach, chopped

1/2c feta

1/2c smoked salmon, diced

6 eggs

1/2c skim milk

Salt and pepper

 

Preheat oven to 350.

Mix together first 6 ingredients in a large bowl. In another bowl, whisk together eggs, milk, salt, and pepper. Combine all ingredients and mix well. Pour into a baking dish that was sprayed with cooking spray. Bake 30 minutes or until cooked through. Enjoy!

snow day

It's another snow day. Hopefully the roads will open and I can make it in to work for a few hours today. Yesterday was another snow day so I made the best of it and tried to be productive at home!  Instead of showing you another photo of our lack of snow I thought I would share a picture of real snow:


Things I completed on my snow day:
1. a killer workout
2. a trip to Starbucks which was closed
3.  worked on a project for a few hours
4. studied for the NBCOT exam
5. washed my hair
6. looked outside at it not snowing...

Productivity at its best!

roasted pepper and tomato soup

Since it was "chilly" on Friday I made soup and whole wheat scones for dinner. Yes, chilly is a relative term but since everything was shut down I decided to call Friday winter and make soup.


3T evoo
2 red bell peppers, cut into chunks
1 yellow onion, chopped
1 celery stalk, chopped
4 roma tomatoes
10 cherry tomatoes
1T herbs de provence
pepper

Preheat oven to 500. Toss bell peppers in 2T evoo. Roast in dish for 40 minutes.
Sautee onion and celery in 1T evoo until translucent. Add tomatoes and herbs. Cook for about 20 minutes until tomatoes are soft and juices have been released. Add roasted red peppers. Puree with an immersion blender until smooth. Reheat then serve immediately with  fresh baked scones.

Home cooking can be so simple. Soup is such a great way to use up vegetables in the fridge and eat healthy at the same time. And when you cannot get out of your neighborhood due to a "snow storm" it was the best thing I could think of!

Warby Parker

Hey readers, have you ever heard of Warby Parker? Its a glasses company. I have been contemplating a new pair of glasses since I spend a great deal of time looking at a computer at work. Yes, I have 3 other pairs all with my current subscription but I like to have options. I think I want something chunky so I ordered 5 trial pairs. One got eliminated right away. Here are the other 4:

Thoughts? Opinions? There are tons of color options for each but I put the photos in my order of preference!

P.S. They are calling for snow again on Tuesday. Over/under a 50% chance school is cancelled again?!? Atleast this time it would be on a day when I would get paid to stay home!

InstaFriday

Happy snow day! We are at home today as LSU and Pennington are both closed. Once we defrosted the car we tried to go out... but the interstate is closed, the bridge out of our area is closed, and the long way around seemed like way too much work. It's officially a snow day and we have only had a dusting of snow early in the morning.

Here's some of my photos from the past week:


1. I did a grocery store run for a food study at work. I felt like people were judging me for buying unhealthy food. But it was fun to go grocery shopping for work!

2. I walked LSU lake on the weekend. The weather was beautiful. It was nice to soak in some sun.

3. We have been obsessed with Trader Joe's oatmeal. I like mine with maple syrup and half a banana.

4. Severe weather?!? It's all relative!

aerial yoga

Please excuse my lack of structure. Life seems to be busy this week. I am still trying to figure out my daily schedule in order to fit everything in! On a positive note, I have been to hot yoga twice this week! Yes, workouts take precedent over blog posts! Now that I am back to working 3 full days per week + teaching 6 hours/ week I need to plan workouts for my health and sanity!
I am trying my first aerial yoga class this weekend. I'll let you know how that goes!

salmon & andouille paella

I love paella. I cannot remember the first times I tried one but I have has some killer ones... mostly made by B and this past summer in Florida.
1T evoo
1 medium onion, chopped
2 cloves garlic, minced
1 red pepper, cut into small square pieces
1c aborio rice
1t smoked paprika
1/2t turmeric
1 tomato, peeled, de seeded, and chopped
pinch of herbs de Provence
pinch dried chili flakes
2c vegetable stock
1c white wine
1 fillet salmon
4 chicken andouille sausages, sliced
1c frozen peas
fresh parsley
wedge of lemon

Pour stock in a small saucepan and keep it over a low heat to stay hot.

In your paella dish or large frying pan, gently sweat the onions for 5 minutes. Add the garlic and red pepper continue to cook for 2-3 minutes. Add the rice, paprika and turmeric and stir well. Add your peeled, chopped tomatoes and fry for a few minutes until the rice is well coated and begins to turn translucent. Add the white wine, stir and allow the alcohol to burn off for a few minutes. Add the mixed herbs and chilli flakes then add a couple of ladles of stock, stir well and allow to simmer on a low heat. Once the stock has been absorbed, add some more hot stock, 1 ladle at a time for another 10 minutes. 

In the meantime add a knob of butter to some olive oil in a pan and add 1/2 a tsp of paprika. Turn up the heat the add the salmon for 1-2 minutes on the skin side to brown. Remove the salmon then lightly fry the seafood mix also for 1-2 minutes. Remove from the heat and set aside. 

Add the salmon and sausage to the pan. Add more stock when it is needed and stir the rice gently making sure you do not break up the salmon. Add the peas and cook for a further 5-10 minutes making sure the rice & salmon is cooked. 

Garnish with wedges of lemon and freshly chopped parsley. 

Serve immediately.

enjoy today

How was your day? It's MLK Day today so we did not have school or work. So far today I went to a private pilates session and napped. Yup, successful day! Okay, I did some other things too like work on getting my thesis published but it is not as exciting as napping. Next up on the to-do list: make a paella for dinner and go to hot yoga with a friend. I have really been trying to get back into the habit of working out. Booking sessions online or committing to going with a friend has worked so far. Lots of new fitness places have been opening up in BTR so we have been taking advantage of free classes and promotions!

InstaFriday

Happy Friday! Today shall be a busy day but I am excited for a long weekend. Here are some instas from the past 2 weeks:

1. I love the marina in PV. It's one of my fave places to eat, relax, and enjoy the day.

2. Multiple times in PV we got called honeymooners. We have only been married 2.5 years but I would not call us honeymooners. I guess the matching sunglasses and coordinated outfits may have been the reason!

3. Back to work means back to coffee from my fancy "C" cup!

4. One last shot of PV from the Malecon. It's only been a week and I miss vacationing already!

thoughts this week

I thought I would do something different today and share some of my current thoughts with you.

1. I am done my degree. Seriously. I thought I had one class left but I found out Tursday morning that I only needed 30 credit hours to graduate with a thesis based Master's degree. I already have 33 hours. Degree complete... I am degree only this semester and will still be graduating in May.
2. Since we were away for 2.5 weeks over Christmas we have now been receiving gifts from family on our doorstep and in our mailbox on a daily basis. It's always exciting to get something in the mail that is not a bill.
3. Class starts today. I am teaching 2 classes at LSU this semester so that shall keep me busy. Maybe I will share more about Pilates this semester with you.
4. Do you watch House of Cards? You should.
5. Back to number one. Did you know I already achieved one of my New Years resolutions? I wanted to graduate with a 4.0gpa. Since I am officially done my degree I have officially achieved that goal! Only 4 more to go!

piazetta

We found a new pizza place in Puerto Vallarta. It's not new, just new to us... and it was delicious! La Piazetta is in old town, near the new pier, by Andeles... just incase you need landmarks.

We had one ham and artichoke pizza and one smoked salmon with arugula pizza. We also shared a bottle of Orlandi between the 4 of us. We have never had Mexican wine before and we were surprisingly pleased. I imagine we will be back in our next trip!

I love sharing smoothie recipes with you. Have you tried any yet? This is our new fave:

1/2 avocado

1/2c kale

1c frozen blueberries

1/2c frozen mango

1/2t lemon juice

1/2t ground flax

1c coconut water


Blend in nutribullet and enjoy immediately!

Oh, Mexico!

We're off to Mexico for the week. I plan to spend my week relaxing by the pool and wandering the streets of Puerto Vallarta.

2014 resolutions

Happy New Year!

I decided to make 5 resolutions this year. They are very realistic and should be doable throughout the whole year. I have some worksheets I found on Pinterest that will help me track my goals.... since we all get distracted at certain times of the year (summer?). Here we go:

ONLY DRINK GOOD WINE

I really hate to waste calories. When I drink cheap wine it feels like such a waste of calories. This year, when I choose to drink wine it will be good wine. I already know that I will be drinking water during happy hour at the faculty club... but I know this will be better for my health.


LOSE 15LBS

I am very proud of my accomplishment of losing 23lbs last year! This year I am aiming to lose only 15 lbs. This is very doable! I need to remember that my lifestyle is changing as I am transitioning from teaching fitness classes while I go to school to working full time. Abs are built in the kitchen so healthy eating will be essential to achieve this goal.


FINISH MS DEGREE WITH 4.0

I only have one class left! This should be complete by May!


SUCCESSFULLY COMPLETE THE OTR EXAM

I have worked my butt off to qualify to write the exam. I have officially received approval to write the exam. Now I just need to study, study, study and I will be ready to go!


FIND BALANCE & STRUCTURE IN MY FITNESS ROUTINE

My transition from teaching fitness classes and going to school to working full time will also require me to change my fitness routine. After teaching 6 hours of Zumba and 6 hour of Pilates per week, I will need to find ways to integrate cardio and strength into my life. There are so many studios I want to try in BTR and so many great online resources that I really have no excuse. First up: the #LoveYourBody challenge from Tone It Up. I have so many things I really want to do but they all fit under this one. Tone up. Yes. Run a 5k? Still on this list! Try different classes. Absolutely!
